Whitts BBQ Sauce delivers a tangy, slightly sweet flavor balanced by a gentle heat from chili and cayenne peppers. The vinegar gives a bright, sharp note that awakens the palate, while sugar softens the acidity, creating a smooth, well-rounded taste.
In a small saucepan, combine 1 cup (240 ml) white vinegar, ¼ cup (60 ml) water, and ¼ cup (50 g) sugar. Stir gently until the sugar dissolves in the liquid.
Add the spices
Sprinkle in 1 teaspoon (2 g) chili powder, ¼ teaspoon (0.5 g) black pepper, ¼ teaspoon (0.5 g) white pepper, and ¼ teaspoon (0.5 g) cayenne or red pepper. Whisk the mixture so the spices are evenly distributed.
Heat the sauce
Place the saucepan on medium heat. Bring the mixture to a gentle boil, stirring now and then to keep the sugar from sticking to the bottom.
Simmer gently
Lower the heat and let the sauce simmer for 5–7 minutes, or until it thickens slightly. Taste and adjust the seasoning if needed.
Cool and store
Remove the pan from the heat and let the sauce cool completely. Pour it into a clean jar or bottle. Store in the refrigerator for up to two weeks.

Note:This sauce has a thin consistency, ideal for basting or as a dipping sauce. For a thicker BBQ glaze, simmer a few extra minutes or add a teaspoon of cornstarch mixed with water.
