Ingredients
  

  • 240 g ketchup
  • 120 g apple cider vinegar
  • 70 g packed light brown sugar
  • 40 g molasses
  • 15 g yellow mustard
  • 5 g smoked paprika
  • 5 g chili powder
  • 2 g garlic powder
  • 2 g onion powder
  • 2 g black pepper
  • 1 g cayenne pepper
  • 15 g olive oil
  • 115 g butter
  • 2 lemons
  • 2 g kosher salt
  • 240 g tomato juice
  • 60 g white wine vinegar
  • 22 g chipotle puree
  • 720 g water
  • 15 g Worcestershire sauce

Instructions
 

Step 1: Start The Base

  • Warm the olive oil and butter in a saucepan over medium heat. Add the garlic and cook for about 30–40 seconds, just until it smells amazing. Don’t let it brown.

Step 2: Add Everything Else

  • Pour in the ketchup, tomato juice, water, both vinegars, brown sugar, molasses, mustard, Worcestershire sauce, chipotle puree, lemon zest, and all the spices. Stir well so everything comes together.

Step 3: Let It Simmer

  • Lower the heat and let the sauce gently simmer, uncovered, for 35–40 minutes. Stir now and then as it thickens and the flavours deepen. Taste and season with kosher salt as needed.

Step 4: Finish It Off

  • For a smoother sauce, blend it until silky. Let it cool slightly, then serve warm on grilled meats, burgers, ribs, or use it as a dipping sauce.
