Prepare Your Ingredients

  • Before diving into the cooking process, gather all your ingredients. Chop the onion, mince the garlic, and drain the green chilies. This will make the cooking process smoother.

Cook The Onion And Garlic

  • In a medium saucepan, melt the butter over medium heat. Add the chopped onion and cook for about 20-25 minutes, or until it becomes soft and translucent. Add the minced garlic and cook for another 30 minutes until fragrant. Be careful not to burn the garlic!

Add The Cheese And Sour Cream

  • Now, lower the heat to low medium. Add both the cheddar and Monterey Jack cheese to the saucepan, stirring constantly until the cheese starts to melt smoothly. Once the cheese has melted, mix in the sour cream for added creaminess.

Stir In The Spices And Chilies

  • Next, add the diced green chilies, chili powder, cumin, salt, and pepper. Stir everything together to combine. If the dip is too thick at this point, add a splash of milk to reach your desired consistency. Continue stirring until the dip is velvety and smooth.

  • Allow the dip to simmer for about 25-30 minutes on low heat, stirring occasionally. This lets the flavors meld together. You’ll know it’s ready when it’s creamy and warm.
