Ingredients
  

  • 500 g fresh button mushrooms cleaned and sliced
  • 2 medium onions finely chopped
  • 2 medium tomatoes chopped
  • 1 tbsp ginger garlic paste
  • 2 tbsp cooking oil
  • 2 tbsp fresh cream
  • 2 tbsp fresh cilantro chopped
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 1 tsp salt or to taste
  • 1 cup water
  • 2 tbsp oil or ghee
  • 3 tbsp plain yogurt curd or ½ cup coconut milk

Instructions
 

Step 1: Saute Aromatics

  • Heat 2 tbsp oil or ghee in a heavy bottomed pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add finely chopped onions and saute until golden brown. Then add ginger-garlic paste and cook for 1–2 minutes until fragrant.

Step 2: Cook Tomatoes & Spices

  • Add chopped tomatoes, coriander powder, turmeric, chili powder, and salt. Cook until the tomatoes soften and the oil starts separating from the masala.

Step 3: Add Mushrooms & Simmer

  • Add sliced mushrooms and mix well with the masala. Pour in 1 cup water, cover, and simmer for 8–10 minutes until mushrooms are tender. Stir in yogurt or coconut milk and cook for another 2–3 minutes.

Step 4: Finish & Garnish

  • Add fresh cream and garam masala, mixing gently. Remove from heat, garnish with chopped cilantro, and serve hot with rice or Indian bread.
