Looking for a unique twist on your regular cookie recipes, you’ve come to the right place. As a food enthusiast, I love experimenting with new ingredients, and today, I’m excited to share a recipe that combines rich, creamy mascarpone cheese with classic cookie flavours.
Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper to ensure the cookies don’t stick.
Mix The Wet Ingredients
In a large mixing bowl, beat together the mascarpone cheese, softened butter, and granulated sugar until smooth and creamy. You can use an electric mixer or a hand whisk. This should take about 10-15 minutes.
Add The Egg And Vanilla Extract
Add the egg and vanilla extract to the mascarpone mixture, beating again until everything is well combined. The mascarpone adds a wonderful creaminess to the batter at this stage!
Combine The Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over mix the dough, as it can make the cookies tough.
Fold In Chocolate Chips (Optional)
If you’re adding mini chocolate chips or any other add ins, fold them into the dough gently.
Shape The Cookies
Scoop tablespoon sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart. The dough will spread slightly during baking.
Bake
Bake the cookies for 12-15 minutes, or until the edges are golden and the centers are set. Keep an eye on them to prevent over baking. Every oven is different!
Cool And Serve
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack. Once they’re completely cool, dust them lightly with powdered sugar for a touch of elegance.
